RECIPE - Lucky Bucket Beer Batter




This is a great batter for Fish or Chicken, but I also like it for Fried Pickles

INDREDIENTS
2 - Cup Flour
1 - Bottle of Lucket Bucket IPA
2 - Eggs
1 - teaspoon Galic Powder
1 - teaspoon Salt
1 - teaspoon Pepper
1 - Cup Planko Bread Crumbs (must be Planko for the crunch)

PROCESS
Mix the Flour, Lucky Bucket IPA, Eggs, Garlic Powder, Salt and Pepper (mix well)
Then Fold in the Planko bread crumbs
dreadge your Fish or Chicken in flour
Then coat in batter
Heat oil to 375 degrees
Cook about 7 minutes

Serve with Toast and Tater Sauce and a Lucky Bucket Lager

RECIPE - Lucky Bucket Sliders




OK - So if you made the Lucky Bucket French Onion Soup and you had at least a 1/2 cup left over - Here is a great slider recipe




INGREDIENTS
2lb ground beef
1/2 - Cup Lucky Bucket French Onion Soup
1 - Cup Planko Bread Crumbs
1 - teaspoon Salt
1 - teaspoon Pepper
Dinner Rolls

PROCESS
with your hand combine all ingredients (mix well)
make in to pattys just a little bigger then your rolls
cook on a hot griddle
Place on bun
I like to top mine with a little bbq sauce

RECIPE - Lucky Bucket French Onion Soup with Pit Beef Sandwichs and Grilled Egg Plant



Had a Great Summer Meal Sunday, which I incorporated Lucky Bucket Lager into my French Onion Soup.

Lucky Bucket French Onion Soup

INGREDIENTS
1 - Large Vidalia Onion
6 Cups - Beef Broth
1 Tablespoon - Salt
1 Tablespoon - Pepper
1 Tablespoon - Minced Onion
1 teaspoon - Thyme
1 - Stick of Butter (real butter)
1 - Bottle Lucky Bucket Lager

PROCESS
Chop the Onion in to small pieces
Place chopped onion, butter, salt and pepper in to soup pot
cook until onions are glassy looking
then add thyme and minced garlic
then add beef broth and Lucky Bucket Larger
Bring to a Boil
Then pour into a crock pot and simmer for 5 hours on low

Pit Beef

INGREDIENTS
1 - 3lb Rump Roast
Salt
Pepper

PROCESS
rub the roast with salt and pepper
then place on a hot grill
turn periodically
remove from grill when a temp of 160 degrees is achieved
Slice thin

Grilled Egg Plant

INGREDIENTS
1 - Large Egg Plant
Salt
Pepper
PROCESS
Slice egg plant into 3/4" slices
salt and pepper
Grill for about 3 minutes on high heat on both sides

SERVING
Place pit beef on a bun
Put French Onion Soup in a good bowl to dip your sandwich in
and add a couple pieces of egg plant
Of coarse serve with a Lucky Bucket Lager

RECIPE - Lucky Bucket BBQ and Buffalo Sauce






After taking the tour of the Lucky Bucket Brewery, I started experimenting with some recipes using Lucky Buckets great local beer. So Saturday night we had grilled BBQ chicken tenders and Grill Buffalo Wings using my new sauces that incorporated Lucky Bucket IPA.

Lucky Bucket BBQ Sauce

INGREDIENT S
1 Cup - Brown Sugar
2-1/2 Cup - Ketchup
1 Cup - Apple Cider Vinegar
1 Tablespoon - Salt
1 Tablespoon - Black Pepper
1 teaspoon - Hickory Smoke Salt
1 Tablespoon - Garlic Powder
1/2 teaspoon - White Pepper
1 teaspoon - Paprika
1/2 bottle of Lucky Bucket IPA

PROCESS
Combine all ingredients in sauce pot. Then slowly stir and increase heat until the ingredients dissolved. Then bring to a boil, then reduce to low heat and simmer for 15 minutes, stirring periodically.

Lucky Bucket Buffalo Sauces

INGREDIENTS
2 Cups - Brown Sugar
1 Stick - Real Butter
1 Tablespoon - Garlic Powder
1 teaspoon - Salt
1 teaspoon - Black Pepper
1/2 Bottle - Lucky Bucket IPA
1/2 Bottle - 12oz bottle of Louisiana Hot Sauce

Bring to a boil, the reduce to low heat and simmer for 5 minutes.

Once I finished my sauces, I dipped my grilled chicken tenders in the bbq sauce, and dipped my wings in the buffalo sauce and served with some grilled bread sticks and enjoyed with a Lucky Bucket Lager

RECIPE - Arnold Palmer Drink


With the US Open Golf Tournament on this weekend. I got a craving for that golf course classic an Arnold Palmer. This is a really easy drink with a ton of refreshing flavor.

You can order these at any golf course in the country or you can make one at home.

INGREDIENTS
Ice
Fresh Brewed Iced Tea
Lemon Aid

PROCESS
In this order put ingredients in you glass
Fill with Ice
Pour Fresh Brewed Iced Tea in 60% of the glass
Fill the Balance of the Glass with Ice Cold Lemon Aid

RECIPE - Italian Summer Burger


This is a new creation, we had for supper tonight. It turned out great!

INGREDIENTS
2lb - Hamburger 90% lean
6 - Ciabatta Hoggie Buns
1/4 lb -Prosciutto
1/4 lb - Pepperoni
1 - small bag of shredded lettuce
6 - Pepperoncini Peppers
12 - Slices of Provolone Cheese
Salt
Pepper
Balsamic Vinegar Dressing
Mayo

PROCESS
Take your Hamburger and make 6 oblong shaped pattys
salt and pepper to taste
Cook hamburgers to medium well on a griddle or frying pan
Toast Buns on Griddle
When Burgers are done, lay 3 strips of prosciutto out and place a hamburger patty on top
Then wrap the prosciutto around the burger
Then place 2 slices of provolone cheese on top and return to the griddle and cover
When Cheese melts remove from the heat.
Toss shredded lettuce in balsamic vinegar dressing
Then assemble in this order
Bottom Bun
Mayo
Pepperoni
Burger wrapped in prosciutto with provolone
Lettuce with dressing on it
Pepponicini Pepper
Top Bun

RECIPE Homemade Biscuits


Here is my biscuit recipe - this morning made these for out biscuits n gravy breakfast.

For the gravy I used used the left over gravy and added some sausage,

INGREDIENTS
4 - Cup Flour
2 - Tablespoons Baking Powder
1 - teaspoon Baking Soda
2 - teaspoon Salt
2 - teaspoon Sugar
2 - Sticks of Butter
1 3/4 - Cup Milk

PROCESS
Combine all dry ingredients and mix with a fork
then melt butter to the point that half is liquid and half is soft
then slowly pour butter at little at a time and mix with a fork
The mixture should be crumbly looking
Then add milk and mix with spatula until
Flour your left hand really good and with your right hand, take out a spoonful of dough (size a little bigger than a golf ball).
Dump the spoon of dough into your left hand and form a ball, then flatten into a 1/2" patty
Place on lightly oiled cookie sheet
Preheat Oven 450 degrees
Bake for 12 minutes

RECIPE - Grandma Emily's Dumplings



These are potato dumplings. This is how my Grandma made them!

For Me, If your talking about comfort food - Potato Dumplings top the list!

INGREDIENTS
For Dough
1 - Cup of mashed potato's (you can use instant)
1 - Egg
1 - Cup of Flour
For boiling
1 - Cup Chicken Stock
1 - Gallon of water
pinch of salt and pepper
Process
Mix with your hands or a spoon (not a mixer) all ingredients until dough is formed.
Through the process of forming the dumplings - make sure to keep your hands and the dumplings floured.
Pinch off a piece dough the size of 2 ping pong balls form into a small potato
Then set aside
Bring to a boil a kettle of water and add a cup of chicken stock, salt and pepper
drop in dumplings 5-6 at a time.
let them boil until they float to the top




Serve with Gravy or Sauerkraut or both

RECIPE - Coney Island Dog


OK - so I have never been to Coney Island, but I created my own Coney Dog anyway.

INGREDIENTS
6 - Rotella's hotdog buns
6 - LasVegas Hotdogs (Fareway)
1 - Yellow Onion
Yellow Mustard

Coney Sauce INGREDIENTS
2lbs - Ground Beef 90% lean
2 - Tablespoons of Minced Onion
1 - Tablespoon of Mined Garlic
1 - teaspoon of Black Pepper
1 - teaspoon of Coarse Salt
1 - teaspoon of Ground Mustard
1 - teaspoon of Celery Salt
1 - teaspoon of Oregano
2 - teaspoons of Chili Powder
1/2 - teaspoon of Hot Chili Powder
1/2 - teaspoon of Thyme
1 - Tablespoon of Parsley
1 - Tablespoon of Paprika
1/2 - teaspoon of Cayenne Pepper
1 - 16oz can of tomato sauce
1 - 8oz cup of water

PROCESS
Coney Sauce
Brown hamburger in a frying pan and chop it countinously as you cook it.
You don't want any chunks, the hamburger should be fine chopped
When the hamburger is 3/4 of the way done start adding the ingredients one at a time and stir as you add them, in the order listed above
Let simmer on low heat for 20 minutes

Boil Hotdogs until they float for 5 minutes
Chop Yellow Onion
Put Hotdog in Bun
Spoon on Coney Sauce
Squirt mustard on top
Top with chopped yellow onion

RECIPE - Italian Grill Bowls

I was feeling creative this week. I had bought some Italian Sausage and Peppers , but forgot the Rotella's buns. I did have a couple left over breads in the freezer. Are you seeing where I am going with this?

INGREDIENTS
4 - Bread Bowls
6 - Italian Sausage
1 - 29oz can of Mancini Roasted Red Peppers
1 - can of your favorite spaghetti sauce ( I like Mr. C's)
1 - 160z pack of Mozzarella Cheese

PROCESS
Grill the Sausage
Cut the tops off and core the bread bowls
Drain Peppers and cut into bite size pieces
Mix Peppers and Sauce together and warm on stove top
Cut sausage in to bite size pieces
Mix sausage in to hot, pepper and sauce mixture
Fill bowls with mixture and top with Mozzarella Cheese
Melt Cheese under broiler and SERVE!

RECIPE - CD's Cucumbers in Vinegar

This is a recipe we got from a family friend. This is a classic summer dish. I really like to serve this with anything grilled.

INGREDIENTS
2 - Cucumbers
1 teaspoon of Dill
1/2 of a red onion
1/2 cup of sugar
2/3 cup of white vinegar
2 teaspoon of salt
1 teaspoon of pepper

PROCESS
Stir together sugar, salt, pepper or vinegar until sugar is dissolved
peel and cut cucumber in to 1/8" chips
cut onion into 1/8" thick rings then cut rings in half
mix cucumbers and onions in a bowl, then bowl mixture over.
sprinkle with dill
Then allow to chill in fridge for at least 3 hours, but I prefer to leave them overnight.

RECIPE - Fried Plantain

Tried Plantains for the first time this weekend - Everyone really like them. They tasted like a cross between a banana and a squash.

INGREDIENTS
1- Ripe Plantain
Vegetable Oil
Sea Salt

PROCESS
Pour about 1/2 " of Vegetable Oil in to a frying pan
Heat slowly to a medium heat about a temp of 325 degrees
Cut Plantain into 1" pieces
Fry both sizes for about 2 minutes each
Remove from oil - let set for a minute
Use the bottom of a bowl and gently smash into 1/4" Patty's
Return to oil and fry until outside is crisp
Remove from oil and lightly salt.
Serve warm
