RECIPE - MV's Mango Salsa


Our neighbor brought us a bowl of salsa last night, and it was AWESOME. My wife called and got the recipe this morning, and I am sharing it with you.

We had it with chips, but she suggested serving it over grilled fish of chicken.

INGREDIENTS
2 - Mango's peeled & diced
2/3 cup of diced red pepper
2 - Tablespoons fresh cilantro diced
1/3 cup of minced red onion
1 - avocado peeled and diced
2 - Tablespoons of white vinegar
1 - Tablespoon of sugar
1/2 teaspoon of salt (I prefer coarse sea salt)
1 - teaspoon pepper ( I prefer restaurant grind pepper)
1 - Tablespoon of Olive Oil

PROCESS
Combine all ingredients in a large bowl and fold gently - then Chill

I liked the way the flavors all contrasted and complimented each other
The sweet of the mango with the tart of vinegar and the tangy red onion, then the salty of the chip. It was a roller coaster of flavor!

* I am considering adding a little spicy banana pepper to mine when I make it

  1. I bet it would be very tasty over tilapia. Speaking of tilapia, if you like hot, spicy food, you ought to to try the recipe at the following link. We did not use as much salt as it calls for, but these fish tacos are delish!
